I made this salad for my lunch today. Oh my it was so good! I put the avocado egg salad over lettuce. You can also do low carb bread or even make it a low carb tortilla wrap. Super delicious! You can make this ahead of time and when you’re ready to make your salad or sandwich it’s ready for you. Meal prepping is a great way to plan for your busy weeks. This will help with less stress thinking about how you can eat healthy keeping it low carb so you don’t destroy trying to figure out what to eat on the go. Keeping it simple and low carb. Don’t overthink it. If you want, think about how you can make it low carb, keto or even paleo to any dish you crave. Anything from pizza, spaghetti and any pasta dish you may be craving you can always substitute the carbs for low carb choices. Have fun with your recipes. - 5 eggs hard boiled and cooled
- ▢½ cup mayonnaise
- ▢1 ½ teaspoons yellow mustard
- ▢1 avocado
- ▢1 rib celery finely diced
- ▢2 teaspoons fresh dill chopped or dried dill
- Directions
- Cut eggs in half. Remove yolks and chop whites.
- Mash yolks with mayonnaise, mustard and salt & pepper to taste until smooth and creamy.
- Add remaining ingredients and stir well.
- Serve over lettuce or keto bread.
