Crispy breakfast taco ๐ŸŒฎ

This was such a a delicious breakfast. Super simple and easy to make. I used one egg, red enchilada sauce, avocado and mozzarella cheese ๐Ÿง€. I use low carb tortillas for this. To keep it quilt free and full of protein. I love making breakfast tacos so universal you can use any ingredients you like. I love to do this when I need use up vegetables avocado especially when they start getting to ripe. You can make yourself a delicious vegetarian breakfast taco.

Ingredients

1 egg

1/2 smashed avocado

1/2 cup red enchilada sauce. I use siete enchilada sauce.

1 cup of mozzarella cheese

Low carb taco size tortillas

Whisk up your eggs, smashed avocado about a half a cup of enchilada sauce 1/2 a cup of mozzarella cheese and whisk all together. Cook up in skillet until everything is cooked up and well combined.

Preheat your skillet on medium high heat drizzled with olive oil. Then place two tablespoons or so of mozzarella cheese once it starts to melt place your taco size tortilla on top of cheese press down. Once your cheese begins to melt and get crispy flip it over and add your ingredients. Once your ingredients are placed on the tortilla gently fold the tortilla in half press down with spatula. Cook for another few more minutes to ensure nice and crispy. Enjoy! So simple so easy your whole family will love this recipe. ๐Ÿ˜€
