Creamy Green Dressing

I made this yummy tuna salad with a creamy green dressing. I had some leftover deviled eggs from Easter only because I forgot to put them out until after dinner. Lol!! I had a bunch of parsley that I needed to use up so that’s what inspired me to make this dressing. Just simple ingredients to make this delicious dressing to go with a salad or you could even use this as a marinade for chicken. I think I will use the rest of this dressing for chicken later this week to grill up.

Ingredients

  • 1 cup of Olive oil or any oil of your choice. 
  • ¾ cup of Balsamic Vinegar
  • 1 Tbl Stone Ground Mustard
  • 2 cloves of garlic
  • ½ lemon squeezed
  • 2 handfuls of Parsley either curly or flat leaf
  • 2 handfuls of Spinach
  • Salt and Pepper

I blended all of the ingredients in my food processor and added a little more salt and pepper. If the dressing is to thick add some more oil. If you don’t have a food processor any blender will work.
